New Style Pizza Guide - The Passion behind the Pizza by Napoli Italian Pizzeria

Relive your childhood memories with your family.

A few things in life bring us back to when life was simpler. First, take a moment to close your eyes. Then, go back into your memory bank when you were 10 years old. It was pizza night, and you were on your way to the neighborhood pizzeria with your family. Once you arrived, you looked intently at the "pizza maestro" as he molded and tossed the dough in the air to get that perfect elasticity to make the masterpiece. We call it a masterpiece because you have to find that perfect balance of sauce, cheese, and toppings.

When the pizza finally makes it to your table, the sweet aroma and the smiles on everyone's faces complete the picture. You are now making memories that will be preserved for a lifetime.

At Napoli's, we keep things simple. Our restaurant is organized with the tradition of neighborhood pizzerias in New York.

Our Customers often tell us that we remind them of their childhood and the comfort food back home. The only difference is that our founder Giovanni and our master pizza maker, Willie, relocated from New York to Orlando over 15 years ago.

Preserving Tradition in a World of Automation

How do you make or relive your childhood memories in a world of automation? How do you find time to talk in an electronically driven society?

We live in a fast-paced world that demands the very best and leaves us with little time to spend with our loved ones. Automation is great for keeping costs down and standardizing processes. But you can't automate tradition and craftsmanship.

The Beauty in Craftsmanship

Our customers have a preconceived notion of how their perfect pizza should taste, look, and feel. The only thing that everyone agrees on is that you have to be able to fold the slice to eat it, and it has to be thin. Therefore, the only way to make a "uniquely yours" pizza is by making it from scratch.

If you look back at the history of pizza in New York, you will find that the Neopolitan Pizza was king at the turn of the 20th century. Cooking a pizza in a coal oven means getting your pizza in and out very fast, and most pizzas were small in diameter, and you had to use a fork and knife to eat them. Coal gives the pizza a distinctive taste, but a ban on coal ovens in New York forced people into using gas ovens. If you like to read one of the best guides on the history of NY-style pizza, you can read the article on Eatery.com

One of the benefits of cooking with gas ovens is that you cook the pizza longer giving the crust that unique texture. You can grab and fold your pizza slice without it falling apart.

Here are some tips to help you get the best out of your pizza, whether you buy it from us or your favorite neighborhood pizzeria.

  • If you want stretchy cheese, you must order your pizza with extra cheese and light sauce so that the pizza doesn't fall apart.
  • Extra cheese means we add more cheese on top of the toppings.
  • If you order extra cheese and well done, keep this in mind: Your pizza will not be as stretchy. It will look like no extra cheese was added because the pizza has to cook longer. This process removed moisture from the cheese.
